Many of my friends and family are vegetarian, so when I was invited to a family gathering, I decided to find something that would be unique and interesting. During a visit to Trader Joe’s, one of the staff members told me about Delicata squash. He said that it was sweeter than most and you could eat the skin. Since it is a seasonal item, I decided to try it. After looking online for a recipe, this is the one I selected by Rachel Cooks. Here is how it should look when it is done. My friend Lynn had a much better photo than mine for the finished product, so I decided to use it.
Here is how the squash looks at the store.
Cut the squash in half lengthwise.
Scoop out the seeds.
Slice the squash making half moons. Put either olive or avocado oil on the pieces as well as a bit of salt.
Roast at 400 degrees until the squash is soft or crispy, whichever you prefer.
