Stuffed Cabbage Soup

I love stuffed cabbage, but don’t have the patience to actually do the stuffing.  So I found a great recipe for un-stuffed cabbage soup.  With winter in full swing, it seemed like a great dish to bring to a party.  Here is what I did differently from the recipe.

*Added a tablespoon of Better than Bullion beef for flavor and eliminated the salt.
*Added a zucchini because I just happened to have it in the fridge.  Just about any vegetable will do.
*Used crushed tomatoes instead of tomato sauce.
*Used a teaspoon of sugar rather an 1/4 cup.
*Topped my bowl with Parmesan cheese.
