Summer is a great time for a celebration and salads make the perfect menu item.
Endive and Escarole Salad – This simple salad combines citrus and greens, so you get the sweet and bitter at the same time. It is a nice side dish for a bridal or baby shower.

This salad has quite a mixture of tastes including sweet blueberries and plenty of raw veggies. The crunch comes from the cucumber, carrots, and onions, while the corn and tomatoes add a bit of sweetness. A mixture of greens provide a slightly bitter flavor. Finally the fish is a great lite source of protein.

You can’t get any easier than making fruit salads. They are great for just about any parties from graduation celebrations to potlucks. Everyone likes them and they are foolproof to make. Simply mix your favorite fruits together in a bowl..that’s it. I have known friends to add spices like cinnamon, ginger, and vanilla.
It is best to select fruits in season because it will not only save you money, but taste better. Depending upon your part of the country, winter months bring wonderful citrus fruits like oranges and grapefruits. While spring and summer are the seasons for berries, grapes, and melons. Apples are best in the fall, and require a light spray of lemon juice to keep them from turning brown. Bananas also benefit by some lemon juice.
